Non-Alcoholic Vermouth Spritzer Box

Each meal at Eleven Madison Park ends with a final sip of house-made vermouth, crafted from a base of seasonal fruits and a blend of herbs, spices, and aromatic roots.

For our non-Alcoholic beverage program, our bar director Sebastian Tollius developed this special no-ABV version, made with Niagara grape juice and infused for 24 hours with aromatics such as wormwood, angelica root, and gentian. A semi sweet vermouth, it’s delicious neat, but to take it up a notch, we suggest serving it with a twist of citrus and a splash of seltzer.

When Swiss-born chef Daniel Humm took over the soaring Madison Avenue restaurant in 2011, he introduced an elevated seasonal tasting menu that made it one of the city’s most coveted reservations. In 2021, he took the dramatic and unprecedented step of eliminating all animal products from the restaurant’s menu, making it completely plant-based. The following year, he introduced Eleven Madison Home, with a mission to change the way the world thinks about plant-based food.
