Dickie Brennan’s folds in tender chunks of slow-roasted mirliton (chayote squash), prized in Louisiana cuisine for its delicate, slightly sweet flavor and ability to absorb the rich, savory notes of the dressing. From the Gulf, they add sweet, wild-caught shrimp and plump, briny oysters, both harvested fresh and folded in just before baking to retain their tender texture and ocean-kissed flavor. A classic “holy trinity” of onions, celery, and bell peppers is slowly sautéed with garlic and fresh herbs—thyme, parsley, and a touch of bay leaf—then deglazed with white wine and enriched with house-made seafood stock for depth and complexity.   • Upon arrival, remove dressing from shipping packaging and place in the refrigerator for up to 3 days or in the freezer for up to 6 months.

To Serve

  • Thaw dressing overnight in the refrigerator.
  • Preheat oven to 375° F.
  • Remove plastic and place pan on a baking sheet.
  • Bake, uncovered, at 325 degrees for 30-35 minutes or until the dressing is warmed through, set in the middle and beginning to brown on the top.
