Handcrafted Beef & Cheese Empanadas

Comfort Foodies started in 2020 as a food truck in Houston, Texas, when Afro-Latina chef Elsa Matthews and her husband Jeff launched their Dominican-Caribbean and Southern fusion concept. The handcrafted beef and cheese empanadas: a golden, flaky crust filled with seasoned ground beef and cheese, fried to golden brown — the Latin heritage side of the Comfort Foodies menu that combines Elsa’s Dominican traditions with Jeff’s Houston Southern roots.

Where Southern Soul Meets the Caribbean

Comfort Foodies, the Houston, Texas kitchen behind Dominican-style empanadas with a crispy corn shell and Afro-Caribbean fillings built on house-made sofrito, was created by husband-and-wife team Elsa and Jeff Matthews. Elsa's Dominican upbringing drives every filling — slow-braised oxtail, seasoned beef, spinach and cheese — while Jeff's Southern background adds a warm undercurrent to a bite that carries both cultures at once.

Handcrafted, frozen to preserve freshness, and built on a recipe that bridges two traditions in one handheld bite — shipped nationwide on Goldbelly.
