As seen on Food Network, their BBQ nachos are loaded with pulled pork, BBQ sauce, spicy nacho cheese, and sliced jalapeños.

Located down an alley in the heart of Memphis, Tennessee, Charlie Vergos’ Rendezvous is dry-rub barbecue heaven. In 1948, Charlie Vergos cleaned out his diner’s basement, discovered a coal chute, and started a legend. Thousands of barbecue lovers flock to The ‘Vous each week. Named "The Best Barbecue Joint in Tennessee’’ by Southern Living, Rendezvous is world-renowned for its dry-rub ribs – which are rubbed with a signature celery seed-kicked spice blend and grilled over charcoal, picking up the undeniable flavor of the well-seasoned pit – and their insanely good nachos, which have been featured on Travel Channel’s “Man v Food,” Food Network’s “Best Thing I Ever Ate,” and Andrew Zimmern’s “Bizarre Foods.”

To Serve

Pulled Pork Shoulder

  • Thaw the pulled pork shoulder.
  • Empty meat into an oven safe container.
  • Preheat your oven to 325 degrees.
  • Heat it up for 30-45 minutes. Alternatively, the meat can be heated in the microwave in 2 minute intervals until warm enough to chow down on.

Arbo’s Cheese Dip

  • Cheese is best served at room temperature. If still partially frozen when you receive, you can remove the top and plastic film and then heat it up in the microwave in 20 second increments. Stir in between increments.

Assembly

  • Lay out a bed of chips. One bag of chips should make 6 full portions of nachos. If it is just an appetizer, it can make a lot more.
  • Add desired amount of pork. 2 lbs of pork shoulder will be plenty for 6. You should even have some left over for a sandwich or two.
  • Drizzle Pancho’s Cheese Dip over top. Be generous with your drizzle (unless you want to stash a little away for yourself).
  • Pour a little Rendezvous BBQ Sauce on top.
  • Sprinkle with Rendezvous Seasoning.
  • Depending on your desired amount of heat, add some of Flo’s Pickled Jalapeños.
  • Dig in and enjoy!
