They smoke their bacon in small batches for a long time. And then they smoke it a little bit more. Each small batch is tasted to ensure that there is enough smokey goodness before it is approved for sale.

Founded by Jonah Shaw in Delhi, New York, the artisan sausage maker Catskill Food Company makes sausages in small batches, by hand, like bacon blue cheese burger, Chinese pork dumpling, and Greek gyro sausages.
