Burnt Bean Co., the Seguin, Texas smokehouse behind low-and-slow brisket built from a championship competition pedigree, was created when two former rivals — pitmaster Ernest Servantes and mentor Dave Kirkland — combined decades of major Texas BBQ titles into a single restaurant. Servantes had won nearly every competition in the state before the student bested the teacher; joining forces only raised the standard.
