Bonci (pronounced Bahn-chi), in the West Loop of Chicago, is the first US location of the cult Roman pizza shop founded by pizzaiolo Gabriele Bonci in 2003 and admired by the likes of Anthony Bourdain. Serving rectangular pizza “al taglio,” or cut pizza, the focus is on the toppings and the airy focaccia-like crust.
