One of Bark Barbecue’s signature takes on merging Dominican flavors with Texas techniques! Bark’s beef carnitas is slow smoked for 6 hours and finished in its own beef fat to achieve some of the most flavorful and tender meat you’ll ever taste. Comes with tostones, creamy green sauce, white onions, and cilantro for topping!

Bark Barbecue began in 2020 as a backyard passion project, when founder Ruben Santana started smoking meats in Queens using Central Texas barbecue techniques and a whole lot of instinct. What started as weekend pop-ups and market appearances quickly became one of New York City’s most buzzed-about barbecue stories. By 2022, Bark put down roots in Brooklyn at Time Out Market under the Brooklyn Bridge in DUMBO. What sets Bark Barbecue apart is its unmistakable point of view: classic low-and-slow Texas barbecue infused with Dominican heritage and NYC energy.

This package serves 2-4 people and includes

  • Smoked Carnitas (2 lbs.)

  • 1 jar Green Sauce (4 oz.)

  • Carnitas ship frozen with ice packs, may thaw in transit.
  • Upon arrival, store in the refrigerator for up to 7 days or in the freezer for up to 1 month.
  • Once ready to cook, thaw meat in the refrigerator overnight or for up to 24 hours. When fully thawed, keep meat at room temperature for no more than 4 hours.
  • If the meat is partially or fully frozen, let it reach room temperature before preparing.

To Serve
Carnitas

  • If frozen, defrost overnight in the vacuum-sealed package, then bring to room temperature.
  • Do not open the bag during preparation.
  • Place the vacuum-sealed bag in a pot of hot water with a temperature of 160°-170° F (water should not be boiling).
  • Heat for 20-25 minutes or until the internal temperature reaches 160°-170° F.
  • Carefully remove the bag from the pot, cut open and shred the carnitas until juicy and loose.

Tostones

  • Fry in oil at 350° for 2-3 minutes until golden brown and crispy, or in the air fryer at 375° for 6-8 minutes until crispy.

To Assemble

  • Place a generous portion of carnitas on top of each green tostones.
  • Add barks green sauce to taste over the carnitas
  • Top with fresh white onion.
  • Finish with fresh cilantro.
  • Serve & enjoy!
