S'mores Brookie Cake

Calling all s’mores and brownie lovers: this is the cake for you! The bottom layer is a fudgy brownie, inside is stuffed with marshmallows and graham crackers, and the top layer is a giant rainbow chocolate chip cookie. It’s topped off with more marshmallows, graham crackers and extra chips!

Taste the rainbow — literally! In 2016, Julie Waxman turned her passion for baking rainbow-colored cookies into Baked in Color, a boutique bakery in New York City. Made with colorful dough, each rainbow chocolate chip cookie is rolled and twisted, creating colorful chocolate chip cookies and rainbow “brookies,” a hybrid cookie and brownie.
