Each set includes three approximately two-pound packs of medallions, making this high-quality offering ideal for smaller gatherings, elegant hors d’oeuvres, or thoughtful gifting.
This package includes 3 Marinated Grilled Beef Tenderloin Medallions
- Each medallion weighs approx. 9 oz.
- Arrives fully cooked and vacuum-sealed
- Serves approx. 4-5 people as an Entrée
- Serves approx. 5-6 people as Hors d’oeuvres
- The medallions ships frozen with ice packs, may thaw in transit
- Upon arrival place in the refrigerator for up to 10 days or in the freezer for up to 12 months
To Serve
- If preparing from frozen, thaw in the refrigerator 12 hours before serving
- Allow the sealed package to rest at room temperature for approximately 30 – 45 minutes
- Bring a pot of water to a full boil, then turn off the heat
- Place the still-sealed package into the hot water (the package may be gently adjusted to fit your pot)
- Let the medallions sit in the hot water for 10–15 minutes
- Remove from water, open the package
For Entrée Service
- Slice the beef tenderloin medallions across the grain into ⅓-inch slices
- Arrange on a warm platter and serve immediately
For Hors d’Oeuvres
- Slice the beef tenderloin medallions across the grain into ¼-inch slices

Founded by Jack Brantley, the beloved catering company became known for a marinade created by Jack’s friend Wayne Fenters—a recipe that still defines Aberdeen’s tender, flavor-packed grilled beef more than four decades later.
What began as a small-town catering business grew into a regional favorite, with Aberdeen’s signature tenderloin served at weddings, corporate events, and even gatherings attended by the President of the United States.
