French King Cake

This is the King Cake in its original French form, the galette des rois that predates the New Orleans version: buttery, flaky puff pastry layered around rum-scented frangipane, the classic French almond filling, baked to deep golden brown. It comes from Maurice French Pastries, where French-trained chef Jean-Luc Albin has baked in Metairie, Louisiana since 1989 and took the People’s Choice award at the 2016 New Orleans King Cake Festival. Each arrives with a golden paper crown, ready to crown whoever finds the piece. Perfect for a Mardi Gras gathering, an Epiphany celebration, or anyone who wants the French original rather than the cinnamon-swirl cousin.

King Cakes have been a time-honored tradition in New Orleans for generations, and no one bakes them better than Maurice French Pastries. Made fresh daily in decadent flavors like praline cream cheese, chocolate pecan, Bavarian cream and traditional cinnamon, and decorated in festive Mardi Gras colors of green, purple and gold, Maurice’s King Cakes and are guaranteed to be the life of the party—not just on Fat Tuesday but year-round. French chef and owner Jean-Luc Albin has brought the finest techniques in pastry baking to New Orleans for almost 25 years, and his iconic King Cakes, famous “Kugelhopf,” and other specialty pastries have earned him legendary status in one of the baking capitals of the world.
