Malai Ice creams blend sweet cream with global spices and aromas for unique ice cream flavors that taste familiar and exotic at the same time. Pooja Bavishi, Malai’s founder, develops her aromatic flavors based on the spicy cooking in her parents’ kitchen growing up.

Pooja uses ice cream as the perfect blank slate to showcase the familiar flavors of her childhood – warm spices like ginger, nutmeg, cardamom, and saffron. Now, Pooja crafts all the ice cream by hand for these totally unique and satisfying flavors.

  • Rose with Cinnamon Roasted Almonds – The most popular, and Malai’s signature flavor! Sweet, floral and spiced – it’s fragrant but delicate and perfectly balanced!
  • Masala Chai – Inspired by the beverage we know and love, this is a little sweet, and a little spicy, with hints of ginger, cinnamon, and black pepper
  • Turkish Coffee – Robust coffee flavor, with granules for some texture, paired with floral, but not overpowering cardamom
  • Orange Fennel – A citrusy base with an herbal, slightly licorice fennel note makes this pairing familiar, yet surprising
  • Mango & Cream – This flavor combines the simplicity of sweet milk with a fruity, tangy and sweet mango and puree.  It’s almost an ice cream and sorbet in one!
  • Sweet Milk – Think: condensed milk in ice cream form.  Sweet simplicity
  • Confetti Sweet Milk – We take the creaminess of Sweet Milk and add the best sprinkles that we know: candied fennel seeds! Each bite will be a contrast of the sweetness of fresh dairy and the minty woodsiness of a pop of a fennel seed.

Seasonal Flavors

  • Baklava – Growing up, I would often find baklava on our table as a sweet ending to our meal and assumed that it was part of my family’s Indian cuisine. When I learned this treat belonged to another culture, I was intrigued to explore the layers of flavor and immediately taught myself how to make it. For this special flavor, we fold house made baklava into a honey-based ice cream, for a scoop that is rich, nutty, buttery, flaky and delicious.
  • Salted Browned Butter Pecan – Long before Malai existed, this ice cream flavor was churning away on the kitchen counter in my tiny New York City apartment. Craving a butter pecan scoop with a bit more depth, I instinctively reached for the ghee instead of butter and browned it to highlight the rich nuttiness. I toasted the pecans and stirred in a pinch of salt. What I ended up with was a rich, decadent ice cream that was nutty, sweet and salty and, quite frankly, the best butter pecan ice cream I had ever had. Although I never changed the classic name, we still use ghee when making this ice cream, and it’s just as good as the very first day I made it.
  • Coconut Tahini with Date Caramel – I have this thing for dates. I crave them as a snack, as a dessert, and even in my morning cup of masala chai. The moment that I truly fell in love with this sweet fruit was during a layover in Dubai (while headed to visit family in India). The dates were out of this world good – so fresh and flavorful. The dish that took my taste buds to another level was a simple duo of dates drizzled with nutty tahini, a sesame paste. That magical bite inspired this flavor – swirling in silky, slightly smoky tahini with earthy, rich date caramel and sweet coconut to bring everything together.
  • Toasted Nutmeg – At the very top of my favorite dessert list you’ll find kheer, an Indian rice pudding that is spiced with nutmeg. Milky, sweet and spiced, this treat is simplicity at its finest. Nutmeg was my grandfather’s favorite spice, so in honor of his taste buds I created this flavor (and I think of him each time I have a scoop). The warm, inviting freshly grated toasted nutmeg against the rich, milky creaminess of the ice cream base delivers a sense of comfort (that only a good spice and a grandfather can bring). It’s perfect for pies and in spiced cookie ice cream sandwiches.

Instructions / Storage

Ice cream pints are carefully packed in an insulated shipping box with enough dry ice to keep the contents perfectly frozen. Don’t worry, it’s colder inside that box than it is in your freezer. Upon receipt, please place your pints in your freezer to store up to 6 months.

If you are looking to serve your pints right away but they arrive rock hard, simply place them on a counter or table top and let them rest for 10 minutes or until you can just slightly squeeze the pints.

  • Orders cannot be shipped to P.O. Boxes
  • Orders shipped to Alaska and Hawaii via 2-day will incur an additional $20 charge or $35 for Overnight Shipping. Sorry guys!
