- Manchego – Fresh and subtle in flavor this is a young Manchego which is most commonly used as a snack cheese along with a fruity white wine and walnuts
- Drunken Goat – This is semi-soft and bone white, with a smooth velvet rind which has been soaked in Doble Pasta wine for 48 – 72 hours and then aged about 75 days. It has a smooth, sweet flavor
- Valdeon – A blue cheese made deep in the Picos de Europa, just outside of the province of Leon, Spain. Produced with cow and goat’s milk, Valdeon is sought after because it is milder than D.O. Cabrales and is still characteristically wrapped in leaves which make for an appealing presentation. It has an excellent balance of sweet and tangy, with a nice earthiness at the finish

- Garrotxa – Garrotxa is a mildly herbal and milky flavor with a hint of tanginess and a semi-firm texture that becomes deliciously creamy in your mouth. The flavor is so pleasant that it has converted many people who previously thought they did not like cheese made with goat’s milk
- Mahon – A cows milk cheese from Minorca, Spain aged 1 year. The milk is thermalized, not pasteurized. Deep yellow in color, its flavor is sharp yet sweet to the finish
