Santa Fe Bite

In New Mexico, green Hatch chiles are king. Originally founded on historic route 66 in 1953 as Bobcat Bite, the restaurant (and its signature burger) achieved renown far and wide before it was forced to relocate and change its name to Santa Fe Bite in 2013.
