Princeton's Beloved Scratch Bakery Since 2016
Founded in 2016 by Jen Carson, LiLLiPiES Bakery was born from a kindergartner's birthday wish — when Sean refused cupcakes and asked for apple pie instead. Jen baked pie in a cupcake tin, and the single-serving LiLLiPiE was born. Carson has since built Princeton's go-to scratch bakery around that same spirit: organic flour, locally-sourced ingredients, high-hydration sourdoughs fermented 12–36 hours, and everything baked on-site daily in small batches. She's also a 2018 Garden State Culinary Arts Award winner for Outstanding Pastry Chef/Baker.
Beyond the bakery, Jen has published two books: the LiLLiPiES Cookbook and the children's picture book "Pie For My Birthday," and teaches artisanal bread baking at Mercer County Community College.
