Last Crumb

The World’s Best Cookie, Made in New York

Nobody has ever seen the Head Baker’s face. What we do know is that he started Last Crumb in Los Angeles, tinkering with a dozen recipes until they were good enough to make grown adults lose their minds a little. In 2025 he moved the whole operation to Brooklyn, put down roots in Williamsburg, and became about as New York as you can get without being born there. The mask stayed on.

His secret is time. Every Last Crumb cookie takes three days to make. Day one is the Head Baker’s secret butter, caramelized well past brown a full day before it ever meets the dough. Day two, the dough rests while the flavor builds. Day three, the cookies are baked by hand in Brooklyn and boxed for the trip to your door. There are no shortcuts anywhere in that process, which is exactly why it works.

Start with the XX Chip, a chocolate chip cookie that has quietly ruined every other chocolate chip cookie for its fans, then work through the seasonal collections that rotate through the year. Chefs and DJs have posted their boxes for years, and opening one is half the fun.

And that ✕✕ on the box? It’s the face you’ll make after the first bite.

The Head Baker would tell you more, but he doesn’t talk. Now please, try to share.
