"The Apple of My Third Eye" Apple Pie Cheesecake

This is the holiday cheesecake people wait all year for. It all starts with a cinnamon-sugar graham cracker crust, add a creamy cheesecake center made with a handmade buttermilk cream cheese, then top it with tart brown sugar apple pie filling and a crunchy oat crisp. Each cheesecake comes with a 4 oz. bottle of house-made bourbon Tipzie Caramel Sauce — drizzle it over the top and you’ve got Thanksgiving magic in every bite.

East Side Cheesecakes is a love story between Julia Tokarz and Gregory Lay, who met in New York City in 2014. The pair, both actors and filmmakers, grew tired of the daily grind, so in 2019 they moved to LA. Greg became head baker at a now-famous bagel shop and Julia took on catering jobs, and when the Covid pandemic hit Julia found herself out of work and they saw the opportunity to launch their own business. They combined the fresh cream cheese that Greg had been making at the bagel shop with Julia’s mom’s Christmas cheesecake recipe, and East Side Cheesecakes was born.

Julia Tokarz and Gregory Lay are the chefs and creators behind East Side Cheesecakes, a cult-favorite LA-based bakery elevating America’s most nostalgic dessert with house-cultured cream cheese and a radical belief in the power of joy. Both classically trained actors and lifelong storytellers, Julia and Greg approach food the same way they approach art: as a way to connect, to surprise, and to move people.

What started as a pandemic passion project in their tiny apartment kitchen in 2020 has since been featured in Los Angeles Magazine, Food Network, and the Los Angeles Times, and is celebrated for its bold flavors, visual whimsy, and unapologetically emotional core. At the heart of every cake is their secret ingredient: a 72-hour, house-cultured cream cheese. Made entirely from scratch, it’s tangy, complex, and alive. Julia and Greg continue to do what they love most: create something that brings us together.
