South Texas meets South Korea at Eaker Barbecue, the Fredericksburg smokehouse run by husband-and-wife pitmasters Lance and Boo Eaker. Lance, raised in Uvalde, smokes Central Texas-style brisket and ribs over mesquite on offset smokers. Boo, born in Seoul, brings her Korean heritage to the menu with gochujang ribs, kimchi fried rice, and Korean cucumber salad. The pairing started as a Houston food truck in 2018, serving spots like Karbach Brewing and catering Houston Texans games, before the couple took a leap of faith and moved their family to the Hill Country to open their brick-and-mortar in 2021.
