These award-winning cookies are a pandemic success story. At the start of the coronavirus pandemic in 2020, Chef David Dreifus (an alum of top restaurants including The French Laundry and Per Se) found himself out of a job for the first time in his life. In order to cheer up his friends and make some extra money, he decided to spend three months perfecting the chocolate chip cookie. His friend Mo Sahoo, after deeming these cookies the best he’d ever tried, convinced David to start a business, and together they took orders on Instagram, biked around all of New York City, popped up out of a taqueria, and finally opened a bakery on the Lowest East Side with the help of family and friends in 2021.
