But for Michael Reiss, a Miami-based general contractor and avid baker, the double-baked mandel bread that he grew up eating just wasnât doing it for him any more. So with plenty of tinkering (and a lot of love), Michael developed a single-baked mandel bread thatâs soft, tender, cakey, and cookie-like, and unlike anything else on the market.
After perfecting his mandel bread recipe, Michael sold it at local shops and gave it away to friends until his daughter, Kimberly, eventually convinced him to start selling it online â and weâre thankful for that!
