All-Purpose Flour, Kosher Salt, Earl Grey Tea, Gelatin Sheets, Sugar, White Chocolate, Semi-Sweet Chocolate Chips, Powdered Sugar, Pistachios

Additional Ingredients Needed

  • 3 oz Cold Butter, cut to pea size plus .5 oz more
  • 2 Tbsp Water, COLD
  • 1 Tbsp Vodka (Optional)
  • ½ Cup Whole Milk ( or ½ more Heavy Cream)
  • 2 ½ Cups of Heavy Cream, COLD
  • 1 tsp Vanilla Extract

The Dough

  • Pour the contents of Packet 1(Flour and Salt) into a mixing bowl
  • Add the 3 oz of Cold Butter and turn the mixer on low
  • Once the butter is distributed evenly, add the Cold Water and Vodka (if using)
  • Mix again until the dough comes together and pulls away from the sides of the bowl
  • Shape the dough into a flat disc, wrap it, and allow it to rest in the fridge for an hour. In the meantime, make your filling!

The Steep

  • Combine 1 cup of diary (½ cup of Milk and ½ cup of Heavy Cream, or 1 cup of either) in a small heavy-bottomed pot
  • Heat the dairy to 200 degrees Fahrenheit (when the edges start to bubble), and turn off the heat
  • Add the tea bags in Packet 2 and let them steep for 30 minutes.

Roll The Dough

  • Preheat the oven to 350° F.
  • Prepare an area to roll out the dough
  • Use Packet 3 (Flour) to dust the surface
  • Take the rolling pin and start in the middle of the dough
  • Apply even pressure, rolling first away, and then all the way back towards you
  • As you continue, rotate the dough every few passes to keep a circular shape.
  • Once the dough is under a ¼ inch thick, test the size by placing the pie tin in the middle. If the dough doesn’t extend past the edges by a ½ inch, keep on rolling. The desired thickness is about ⅛ inch. It is key to keep the dough cold while working so that it is easier to pick up and place into the tin
  • Once the dough is in the tin, press the dough into the bottom and then up the sides
  • Use a knife or scissors to cut any dough that extends more than ½ inch over the outer rim of the tin
  • Fold the edge of the dough under itself, thickening the rim. This will allow you to flute the crust if you choose

Blind Bake the Crust

  • Place the piece of parchment into the pie shell
  • Using pie weights, fill the pie shell making sure to press weights up on the sides
  • Bake the crust in the preheated oven for 30 minutes
  • Remove the parchment paper and the pie weights, and bake for another 10 -15 minutes, until the crust is golden brown
  • Allow to cool to room temperature

Make the Earl Grey Mousse

  • Find Packet 4 (Gelatin Sheets). Bloom the Gelatin Sheets for 3 minutes in cold water. (Overblooming gelatin will make it useless.)
  • Strain off the excess water
  • Once the tea has steeped, remove the bags from the milk and squeeze them out gently. * Add Packet 5 (Sugar and Salt). Reheat the tea milk to a gentle simmer and add in the Gelatin
  • Allow it to melt, stirring gently.
  • Prepare the contents of Packet 6 (White Chocolate) in a medium-sized bowl
  • Pour the warm tea mixture over the chocolate and stir until the chocolate is completely melted
  • Place the bowl in the refrigerator to cool for one hour, until the gelatin just begins to set.

Dark Chocolate Ganache

  • For such a small amount of ganache, we can use the microwave to heat ¼ cup of Heavy Cream and remaining .5 oz of Butter with half of the Dark Chocolate (Packet 7)
  • Start with 15 seconds and continue to heat at 10 second intervals until the Chocolate and Butter are visibly melting
  • Stir between bouts in the microwave
  • Once the first half of the Chocolate is melted, add the second half and see if you can melt the rest in the same method.
  • Once the pie shell has cooled down from its blind bake, pour the melted chocolate into the bottom of the shell and move it around to completely coat the bottom
  • Put the pie shell in the refrigerator to firm up the chocolate until the Earl Grey Mousse is ready.

Make the Whipped Cream

  • The first time, the whipped cream will go into the mousse, the second will be as a topping for the pie.
  • Chill your mixing bowl
  • Once the mixing bowl is cool, attach it to your mixer with the whisk attachment, or if you are doing it the old fashioned way, get ready for a sore arm.
  • Pour the 1 cup of Heavy Cream into the mixing bowl and whip on medium speed until you have soft peaks (the cream is just starting to stand up on its own and not immediately sink back into the bowl).
  • Once you have soft peaks, sprinkle in Packet 8 (Powdered Sugar)
  • Keep whisking for another minute until the cream reaches firm peaks (one’s that stand up in the bowl.
  • Set this batch of cream aside until the Earl Grey Mix is cooled.
  • Repeat this process with Packet 9 and the remaining Heavy Cream now, or after you have assembled the pie, but this time put in a teaspoon of Vanilla Extract when you add the packet.
  • Keep the Whipped Cream chilled until the pie is cool enough to decorate.

Assemble the Pie

  • At this point, you should have a Pre-baked Crust with a chilled layer of Chocolate Ganache, two bowls of Whipped Cream (one for the mousse, and one with vanilla for topping), and Earl Grey Mousse base.
  • If completely chilled, the Earl Grey will have taken on a Jell-o like texture
  • Using a whisk or spatula, stir up the base to turn it into more of a smooth pudding texture
  • Get the bowl of Whipped Cream for the Mousse, take about a ⅓ of the whipped cream, and plop it into the Earl Grey
  • Stir it in until it is all mixed evenly
  • Take the next ⅓ and this time, fold it in gently to the Mousse
  • The key to folding is to gently use your spatula to scrape the edges of the bowl and then “fold” the edges into the center, occasionally swiping through the center of the mix to make sure the mixture is blending
  • Repeat with the final ⅓ of whipped cream.
  • Once the Mousse is ready, scoop it gently into the prepared pie crust
  • Use a spatula to smooth the surface
  • Place the pie into the refrigerator to chill and allow the mousse to set. This will take at least one hour.
  • Once you are ready to serve, top with whipped cream and Packet 9 (Pistachios)!
