With James Beard Award-winning chef Mashama Bailey (who was the star of season six, episode 1 of Netflix’s “Chef’s Table”) and her business partner Johno Morisano, together you will all prepare a truly delectable Three-Course Lowcountry Meal that will transport you to an evening on the Georgia coast.

This limited-edition kit highlights The Grey’s signature Port City Southern style and includes everything you need to cook along with Mashama and Johno. Starting with snacks and cocktails, this package takes you all the way through to a delightful Southern dessert. The Meal Kit includes gougères that you will learn how to pipe, radishes with cultured butter, smoked olives, short ribs with a secret dry rub blend and The Grey’s unique Port City sauce, silky mashed potatoes, Mashama’s famous smoked greens and an apple crisp for dessert. Don’t worry, we didn’t forget the drinks. You will also receive two DIY cocktail kits – a Scuppernong Gimlet to begin your night and to pair with your favorite gin, and a Milk Nectar dessert cocktail for which you should have your loveliest rum on hand.

Mashama and Johno will be right there throughout the evening answering your questions, offering pro cooking tips, talking wine and drink pairings and, of course, cooking, eating and drinking right along with you. This is one you don’t want to miss!

– The day before your class, you’ll receive your kit at your door. You’ll receive an email with all the info you’ll need to join the Zoom event the day of the class.

You Will Need

For the Gougères
2 Eggs, Sauce Pot, Wooden Spoon, Spatula, Mixing Bowls, Scissors, Parchment, Pan Spray, Half Sheet Tray, Measuring Spoons, Fine Mesh Sieve, Water

Small Bowl and a Ramekin for Pits

For the Short Ribs
7"X10"X3" Baking Dish

For the Mashed Potatoes
2 1/2 Qt. Sauce Pot With Lid, Whisk, Spoon

For the Collard Greens
3 1/2 Qt. Heavy Bottom Pot With Lid, Spoon or Tongs

For the Apple Crisp
1 Qt. Oven Safe Dish, 4 Qt. Mixing Bowl, Whisk, Pairing Knife

For the Cocktails
Ice, Gin, Rum

Instructions / Storage

  • Your package will come with 2 boxes, one cold and one room temperature
  • Refrigerated items ship with dry ice, dry ice may dissipate in transit
  • Do not remove dry ice with bare hands
  • Place all cold items in the refrigerator until 1 hour before we start cooking
  • All dry ingredients can be left at room temperature

To Serve


  • Preheat oven to 425F conventional or 400F convection.
  • Spray and line a half sheet pan with parchment.
  • Cut tip of the piping bag and load piping tip. Set aside.
  • Crack all your eggs and place them in a bowl. Set aside.
  • Sift flour and set aside.
  • In a saucepot, bring 1/2 cup of water. 1/2 cup of whole milk, 1/2 stick of butter, sugar, and salt to a boil over med-high heat.
  • Add sifted flour and stir.
  • Continue to stir until a film forms on the bottom of the pan.
  • Transfer to a mixing bowl stirring constantly, add each egg one at a time combining completely.
  • Fill pastry bag, twist end of bag to close.
  • Pipe half dollar size mounds onto the sheet pan.
  • Wet your finger and tap down any pointy tops.
  • Place in your hot oven. Keep the door closed for 10 minutes rotate & bake an additional 5-10 minutes.


  • Radishes are to be served with a ramekin of butter topped with Maldon salt.

Short Rib

  • Keep oven at 425F conventional or 400F convection.
  • Place short ribs in an oven-safe baking dish.
  • Cook for 30 minutes.

Collards & Mashed

  • Both sides may be heated on the stovetop.
  • Add water to mashed potatoes if they are too thick.
  • Place in serving dishes when ready.

Apple Crisp

  • Keep oven at 425F conventional or 400F convection.
  • Pour apple filling into buttered baking dish.
  • Top with Streusel.
  • Bake until bubbly.

Cocktail: Scuppernong Gimlet

  • Fill glasses with ice, pour mixture over.
  • Add gin.
  • Stir.

Cocktail: Milk Nectar

  • Fill glasses with ice, pour mixture over.
  • Add dark rum.
  • Stir.
