Since returning from Italy and opening up shop in Manhattan in 1994, Jim became the first ever winner of the James Beard Award for Outstanding Baker. When Sullivan Street Bakery opened, it immediately cultivated a loyal following due to their revolutionary with its no-work, no-knead baking methods. The secret? A wet dough and slow fermentation and baking in a heated covered pot, which creates essentially an oven within an oven to trap steam as the bread bakes.
