To make this real-deal Eastern North Carolina style BBQ, whole hogs are cooked over oak wood-fire for up to 16 hours, resulting in smoky, tender chopped pork with crunchy bits of skin mixed throughout. That same tradition and attention to detail is applied to their signature vinegar-based BBQ sauce. It’s a real taste of Carolina heritage that you’ll never forget!

If you know good Carolina-style BBQ, you know the Skylight Inn. The Jones family has been cooking real whole-hog BBQ in North Carolina since the 1830s, and back in 1947 17 year-old Pete Jones opened a small restaurant on his family’s property in the small town of Ayden, North Carolina, just outside of Greenville. Since then, Skylight Inn has become widely renowned as the gold standard for Eastern North Carolina-style whole-hog barbecue. Pete passed away in 2006, but Pete’s son Bruce, nephew Jeff, and grandson Sam Jones continue to run the restaurant and honor his legacy. Skylight Inn has been hailed by everyone from National Geographic to GQ Magazine as having some of the best barbecue in America, and in 2003 it was crowned an “American Classic” by the James Beard Foundation.

Ingredients

  • Chopped BBQ Pork – Pork, Hot Sauce (Vinegar, Aged Peppers (Peppers, Salt, Vinegar)), Water, Xanthan Gum And Benzoate Of Soda (To Preserve Freshness And Flavor), Apple Cider Vinegar, Salt, Black Pepper
  • BBQ Sauce – Water, Distilled Vinegar, Sugar, Hot Sauce [vinegar, Aged Peppers (Peppers, Salt, Vinegar), Water, Xanthan Gum And Benzoate Of Soda (To Preserve Freshness And Flavor)], Tomato Paste, Spices, Corn Syrup, Salt, Modified Food Starch, Soybean Oil, Artificial Color (Rd&c Red #40)
  • Pork Crackling – Pork, Salt.

Instructions / Storage

  • Package ships frozen with ice packs, may thaw in transit
  • Upon arrival, place meat and sides into the refrigerator or freezer.
  • Items will last 4-5 days in the refrigerator or up to 6 months in the freezer.

To Serve

  • Food arrives cooked so make sure to heat everything slowly. Any overcooking will result in drying out the food and reducing the quality of the product. Try not to allow the food to exceed 150F during heating.

BBQ Pork – Stovetop

  • Place pork bag into simmering water (approx. 190 degrees).
  • If cooking thawed pork, simmer for 8-10 minutes.
  • If cooking frozen pork, simmer for 10-12 minutes, then turn off heat and allow pork to sit in the water for an additional 5 minutes.
  • Carefully remove the bag from pot, open the bag, and pour pork into a bowl.
  • Serve and enjoy!

BBQ Pork – Oven

  • Place food in a covered container.
  • Keep oven heat on low.
  • Serve and enjoy!

BBQ Pork- Microwave

  • Spread food in a shallow bowl and allow 1-2 minutes per pint.
  • Make sure to stir food and rotate it.
  • Serve and enjoy!

Pork Crackling

  • Stir crackling into hot pork.
  • Serve and enjoy!
