Chef Shirley has curated a limited-edition Chinese New Year meal kit that will take you from dumplings all the way through to donuts with all the ingredients you need to make: her famous Cheeseburger Potstickers with bacon tomato jam, her Top Chef-winning combo of two classic comfort foods that’s become a staple at her restaurant; her take on beef and broccoli with skirt steak and black pepper sauce; garlic noodles with a tangy sesame sauce; and finally gluten-free (AKA guilt-free) black sesame mochi donuts and a fresh, floral jasmine tea to sip throughout the class.

Ingredients

  • Dumpling Wrappers – Flour, Water, Salt
  • Cheese Burger Filling – Ground Chuck From Creek Stone, Shredded Cheddar Cheese, Diced Red Onion, Worcestershire Sauce, Black Pepper, Kosher Salt
  • Bacon Tomato Jam – Bacon, Can Tomato, Onion, Sugar, Fructose Syrup, Salt, Black Pepper
  • Beef & Broccoli – Creek Stone Prime Grade Skirt Steak; Steak Marinate (puree ginger, scallion, mushroom sauce, soy sauce, sesame oil); Red Onion, Broccolini, Canola Oil, Crispy Garlic, Sesame Seeds; Black Sauce (rice wine, soy sauce, mushroom sauce, chicken stock, garlic, ginger, black pepper, corn starch)

PRIOR TO THE CLASS

Cheeseburger Potstickers Kit

  • 10 Flour Jiaozi Wrappers

  • 1 Red Onion

Garlic & Sesame Noodles

  • 1 box Egg Noodles (11 oz.)

  • 1.5 tbsp Minced Garlic
  • Crispy Garlic & Sesame Garnish (2 Tbsp)

Black Sesame Mochi Donuts

  • 2 Fried Mochi Donuts
  • Black Sesame Sugar (1/4 C)

Jasmine Tea (2 Tea Bags, 2 oz.)

Place all ingredients in the fridge upon unpacking.

2. The Night Before Class: Marinate the skirt steak in the prepared steak marinade (a green purée), place in a sealed container, and refrigerate overnight.

3. An Hour Before Class: Gather the ingredients & necessary kitchen equipment before the cook-along starts:

  • Tea pot or tea mugs to brew tea (1 tea bag jasmine green tea; 1 tea bag filled
    with Oolong tea are included in your kit)
  • Cutting board
  • Knife
  • Cooking sheet/baking sheet pan
  • Cast iron pan /heavy skillet sauté pan to sear steak
  • Nonstick pan or very well-seasoned cast iron pan, with a lid or sheet pan to cover
  • Small sauce pot/ sauté pan/ or microwave safe small bowl to reheat black pepper sauce
  • Small sauce pot (4qt or 6qt) to boil water and reheat cooked noodles
  • 1 large skillet to make garlic sesame noodles
  • 1 strainer to remove noodles from water
  • 3 Small mixing bowls
  • Kitchen towels, cooking utensils, tongs, spoons, tea spoons, spatula, small whisk
  • Plates for plating, 1 plate for potstickers, 1 plate for beef and broccoli, bowls for noodles, and a small plate for donuts

Preheat your oven to 425 degrees.

DURING THE COOK-ALONG

Chef Shirley will lead everyone through the cook-along, but you can also follow the directions below:

Cheeseburger Potstickers:

STEP 1:
In a large bowl, mix ground beef, shredded cheddar cheese, red onion, and Worcestershire sauce together and season with salt and black pepper. Finish with canola oil and mix well.

STEP 2:
Put 1 Tbsp of beef filling in the middle of each pot sticker wrapper, fold pot stickers. After all the potstickers are folded, heat up 2 tbsp canola oil in a 12 inch nonstick skillet over medium heat. When the pan is hot, line up the pot stickers flat side down in the pan. Add ¼ cup water and cover it with a lid, drop the heat to low. Cook for 4 minutes and remove the lid. The top of the potstickers will have cooked from the steam. Turn up the heat to medium and allow the bottom of the potstickers crisp up, about 1 minute. When they are golden on the bottom, the potstickers are done.

Beef & Broccoli

STEP 1:
Clean and peel the red onions. Slicing against the grain, cut them into 1-inch thick rings. Clean the broccolini and put them into a large bowl with the onions.

STEP 2:
Heat up a cast iron or heavy bottom saute pan over high heat on stove top. When the pan is hot, add 1 tbsp canola oil in, place sliced red onion in the hot pan and char both sides, about 2 minutes on each side. When both sides are charred, but the onions are still raw, place these into a salad bowl and cover with plastic wrap. The carry-over heat will create steam to finish cooking them. Lightly grill the broccolini for 1 quick minute, so they are still green and crunchy.

STEP 3:
We will use the same cast iron / saute pan as the charred red onion, so keep it on the heat high. After the steak is marinated, wipe off the marinade. Season the steak with all 1 ½ tbsp of black pepper on both sides, and salt to taste. It is very important to grill the steak over high heat so there is a nice char and a quick sear, just like cooking in a wok. Skirt steak is very thin, so it cooks really fast; each side will only take 90 seconds to 2 minutes for medium rare, which I think is the best temperature to enjoy this cut of steak.

STEP 4:
Allow the skirt steak to rest for a couple minutes before slicing. Pour black pepper sauce into a microwave safe container and reheat for 30 seconds or until it’s hot. Slice the steak into bite size, set the steak on top of the red onion rings and the grilled broccolini, and spoon hot black pepper sauce over the steak. Finish with crispy shallots and sesame for garnish.

Garlic & Sesame Noodles:

STEP 1:
Bring 3 qt of water to a boil in a pot over high heat. When the water is boiling, place noodles in the water and stir, cook the noodles for 1 minute, remove from water with a strainer, and set aside.

STEP 2:
In a large skillet, heat 2 tbsp canola oil over medium heat, when the oil is warm, place minced garlic in the pan, slowly cook until the garlic turns translucent and you can smell the aroma. Then place the hot cooked noodles in the skillet and toss and stir. When garlic coats the noodles, add the noodle sauce into the pan and make sure that all noodles are coated evenlywith sauce. Turn off heat. Plate the noodles into a bowl and sprinkle crispy garlic and toasted sesame over the top.

Black Sesame Mochi Donuts:

Step 1:
Remove mochi donuts from the box, KEEP the BOX, put black sesame sugar into this box, we are going to use it to coat!

Step 2:
Place donuts on a cookie sheet, brush a little oil all over them, you can just use your finger, rub a little oil to help baking.

Step 3:
Place donuts in 425 oven for 4 to 6 minutes until the outside is crispy and hot, remove from oven, when they are hot, put them back to the box that’s filled with sugar now, close the lid tightly, shake like crazy and let the
sugar coat the donuts. Enjoy your mochi donuts while they are warm!!
