Cardiff Crack Tri Tip
Meat arrives raw and requires cooking. Upon arrival, place the meat in the fridge or freezer to serve later. Trip tip can be stored in the refrigerator for 3-5 days or in the freezer for 3 months.
Allow meat to thaw in the fridge for 24 hours before cooking
Step 1 Prepare grill for direct and indirect medium high heat
Step 2 Sear the tri tip for 5-7 minutes per side over direct heat, until meat is nicely browned and caramelized
Step 3 Move the tri tip over to the indirect heat and grill for an additional 10-15 minutes per side. For medium rare, the tri tip should reach an internal temperature of 130F
Step 4 Allow tri tip to rest for 5-10 minutes before slicing
Step 5 Slice thinly against the grain and serve!
Oven Roast Method
Step 1 Preheat the oven to 450F
Step 2 Place the tri tip in a shallow roasting pan. Place the pan in the oven and turn down the temperature to 350F
Step 3 Cook for 12-14 minutes per mound
Step 4 Check the internal temperature after 30 minutes. For medium rare, the tri tip should reach an internal temperature of 130F
Step 5 Allow tri tip to rest for 5-10 minutes before slicing
Step 6 Slice thinly against the grain and serve!
