Instructions

To Store

  • All meats and sides ship with dry ice
  • DO NOT handle dry ice with bare hands
  • Upon arrival, place meats and sides in the refrigerator or freezer
  • Meats will last 2 weeks in the fridge, or 3-6 months in the freezer
  • Sides will last 5 days in the fridge, or 3-6 months frozen

To Serve

Brisket
  • STEP 1: Thaw overnight in the refrigerator
  • STEP 2: Preheat the oven to 275 degrees
  • STEP 3: Remove vacuum-sealed plastic bag, but keep brisket wrapped in butcher paper
  • STEP 4: Bake for 2-3 hours, or until the internal temperature reaches 135 degrees
  • STEP 5: Rest brisket for 30 minutes prior to removing the butcher paper and slicing
  • STEP 6: Slice brisket "against" the grain. 

Sides
  • STEP 1: Thaw overnight in the refrigerator (do not remove from vacuum sealed plastic bag)
  • STEP 2: Fill a large pot halfway with water and bring to a light boil 
  • STEP 3: Place bag into the pot and boil for approximately 10 minutes
  • STEP 4: Turn burner off and allow the bag to sit in the hot water for 5 minutes
  • STEP 5: Remove from the pot, open the vacuum sealed bag, and serve
Smoked Chicken
  • STEP 1: Thaw overnight in the refrigerator
  • STEP 2: Fill a large pot halfway with water and bring to a light boil 
  • STEP 3: Place bag into the pot and boil for approximately 10 minutes
  • STEP 4: Turn burner off and allow the bag to sit in the hot water for 5 minutes
  • STEP 5: Remove from the pot, open the vacuum sealed bag, and serve

Whole Turkey
  • STEP 1: Thaw overnight in the refrigerator
  • STEP 2: Preheat the oven to 275 degrees
  • STEP 3: Remove vacuum-sealed plastic bag
  • STEP 4: Add 1/2 lb. of butter on top of the turkey and wrap tightly in heavy duty foil
  • STEP 5: Bake for 1.5-2 hours, or until the internal temperature reaches 145 degrees
  • STEP 6: Serve immediately

Ham
  • STEP 1: Thaw overnight in the refrigerator
  • STEP 2: Preheat the oven to 275 degrees
  • STEP 3: Remove vacuum-sealed plastic bag
  • STEP 4: Add 1/2 lb. of butter on top of the ham and wrap tightly in heavy duty foil
  • STEP 5: Bake for 1.5-2 hours, or until the internal temperature reaches 145 degrees
  • STEP 6: Serve immediately
Pork Spare Ribs
  • STEP 1: Thaw overnight in the refrigerator
  • STEP 2: Preheat the oven to 275 degrees
  • STEP 3: Remove vacuum-sealed plastic bag
  • STEP 4: Add 1/2 lb. of butter on top of the ribs and wrap tightly in heavy duty foil
  • STEP 5: Bake for 45 minutes, or until the internal temperature reaches 145 degrees
  • STEP 6: Serve immediately
Smoked Turkey Breast
  • STEP 1: Thaw overnight in the refrigerator
  • STEP 2: Preheat the oven to 275 degrees
  • STEP 3: Remove vacuum-sealed plastic bag
  • STEP 4: Add 1/2 lb. of butter on top of the turkey and wrap tightly in heavy duty foil
  • STEP 5: Bake for 1-1.5 hours, or until the internal temperature reaches 145 degrees
  • STEP 6: Serve immediately
