Piece of Meat was founded by Daniel Jackson and Leighann Smith in New Orleans in 2018, and it quickly racked up heaps of acclaim as one of The Big Easy’s most exciting new butcher shops and restaurants. Jackson and Smith, who were named Eater New Orleans’ Chefs of the Year in 2018, work closely with local Southern farmers and purveyors to source top-quality, sustainably and humanely-raised meat.   • Bread – Comes From a Facility That May Contain Nuts. Fried Onion: Onion, Cornstarch, Flour, Salt, Pepper
  • Tasso – Pork, Salt, Pepper, Cayenne, Chili Powder, Dry Thyme, Paprika, Brine. Hot Italian: Fennel, Cayenne, Chili Flake, Salt, Black Pepper, Hog Casing
  • Boudin – Pork, Salt, Pepper, Cayenne, White Pepper, Jalapeno, Poblano, Onion, Celery, Water, Garlic, Butter, Green Onion, Rice, Natural Hog Casing
  • Andouille – Pork, Salt, Black Pepper, White Pepper, Pepper Mash, Water, Cayenne Pepper, Dry Oregano, Natural Hog Casing.

  • Buns – Made by a Local Bakery the Shop Contains Nuts.

Instructions / Storage

  • Sampler ships frozen with ice packs, may thaw in transit
  • Upon arrival remove from the package, and refrigerate
  • Boudin Eggrolls & Boudin may be kept refrigerated for 4-5 days
  • Brisket may be kept refrigerated 5-7 days
  • All other items may be kept refrigerated 7-10 days
  • If frozen upon arrival pack can stay frozen a few weeks

To Serve

Bologna Sandwich

  • Cut the bread Hamburger style, set aside
  • In a pan on medium heat, add a little oil, fry your bologna
  • Cook for about 2-3 minutes until desired crust forms, looking for good caramel color
  • Flip and add your BBQ sauce and cheese, you want a nice amount of sauce drizzled on the bologna, you are using the cheese to trap the sauce on to the bologna, turn off the heat and cover with a lid if needed to finish melting the cheese.
  • Chop iceberg (not included)
  • Toast your bread, lather with Dukes
  • Place the lettuce on the mayo
  • Bologna on top of the lettuce
  • Pile fried onions on top
  • Lather top bun with Dukes
  • Place top bun on the pile, cut in half if you’d like otherwise start eating!!

Boudin Egg Rolls: Oven

  • Preheat oven to 375*
  • Place egg rolls on a baking tray, put in the oven for 7-10 minutes let cool a bit, dip and enjoy!

Boudin Egg Rolls: Frier

  • Fry at 325* until heated through

Sausage & Boudin: Oven

  • Preheat oven to 375
  • Place on a baking tray or pan
  • Cook for about 7-10 minutes
  • You are looking for an internal temperature of 155*-160*

Sausage & Boudin: Stove Top:

  • Grease your pan and heat to medium-high heat
  • Crisp sausage up on each side
  • Turn the heat down and cover with a lid cracked
  • You are looking for an internal temperature of 155*-160*

Sausage & Boudin: Grill

  • On a medium hot grill
  • Place sausage around the perimeter of the grill
  • You are looking for an internal temperature of 155*-160*
  • Let the sausage rest a few minutes and enjoy.

Brisket Sandwich

  • Leave brisket in the sealed bag, bring water to a boil, turn off and add brisket bag
  • Heat in the sealed bag, open and serve.
  • Once the brisket is heated
  • Cut and toast your bun to a golden brown, smear aioli over both sides, place the brisket on the bottom of the bun, next add the pickled onion, cover with the dressed top bun
  • Enjoy!
