Since opening Northern Waters Smokehaus in 1998, Eric Goerdt has been perfecting the arts of preservation, pickling, smoking, and dry-curing. With unique adaptations of ancient recipes along with some experimentation, everything is prepared in small batches in Duluth, Minnesota.
