Bishop’s revolutionary approach to farming—mineralizing the land with sea kelp, compost and fish emulsion to produce a strong plant with minimal intervention—produces an incredibly robust Tri-Star, so-called for being the star of three seasons. It caught the eye of young chefs like Daniel Boulud and Jean-Georges Vongerichten, who put these on their menus, and the rest is history… .
