Named after their mother Mimi, Hannah and her sister Marian were unable to find dumplings that came close to the ones their mom made so they took matters into their own hands and started Mimi Cheng’s in 2014. In this interactive event, Hannah Cheng will lead you through how to wrap, cook and enjoy NYC’s favorite dumplings so you can recreate them at home.

This DIY Dumpling Kit includes everything you need to make Mimi Cheng’s iconic dumplings, including their delicious chicken & dumpling filling, dumpling skins and secret sauce, along with ingredients for their super popular garlic-y cucumber salad and two scallion pancakes to munch on while you cook. Just like Mimi used to make!

This package serves 4-6 people and includes everything you need to make garlic cucumber salad, 30-40 dumplings and 2 scallion pancakes.

Kit Includes

Garlic Cucumber Salad

  • Persian Cucumbers
  • Salad Vinagarette
  • Garlic

DIY Dumpling Kit

  • 24 oz. Organic Chicken & Zucchini Dumpling Filling
  • 18 oz. Dumpling Skins (approximately 70 pieces)
  • 1 Bottle Secret Sauce (each 8 oz.)

Scallion Pancakes

  • 2 Pancakes (8″ × 0.5″ each)

You Will Need

Vegetable oil, salt, baking sheet, flour for dusting the baking sheet, frying pan with lid, cutting board, knife, small bowl for water, spoon


Garlic Cucumber Salad – Persian Cucumbers, Vinaigrette, Garlic

Organic Chicken & Zucchini – Organic Chicken, Zucchini, Scallions, Ginger, Sesame Oil, Sea Salt, Spices (no msg). Dumplings Contains Soy and Wheat

Scallion Pancakes – Wheat Flour, Scallions, Sesame Seeds, Palm Oil, Salt, Sugar.

Instructions / Storage


  • This package ships with ice packs, may thaw in transit
  • Upon arrival, place kit in the refrigerator and consume within 2 days
  • Secret Sauce bottle can be stored in the refrigerator.
  • Leave sauce out at room temperature prior to consumption in order to allow the olive oil within to thaw to a liquid state

Prior to Class

1. Upon Arrival: Unpack your Dumpling-Making Meal Kit once it arrives. Use the checklist below to make sure that you have all of your ingredients:

  • Persian Cucumbers
  • Salad Vinagarette

Place all ingredients in the fridge overnight until the class.

2. An Hour Before Class: Gather the necessary kitchen equipment & ingredients before the cook-along:

  • Vegetable oil
  • Salt
  • Baking sheet
  • Flour for dusting the baking sheet
  • Frying pan with lid
  • Cutting board & knife
  • Small bowl for water
  • Spoon
  • Bowl for cucumber salad
  • Plate for cooked dumplings

Remove Secret Sauce from fridge, and allow to come to room temperature.

3. Before Zooming: Download the Zoom App on your computer or mobile phone. You do not need to register for an account to join.

During Class

At Class Time: Join our Zoom Cook-Along Thursday, March 4, at 7pm ET! Click this Meeting Link: https://zoom.us/j/99177067953 (Meeting ID: 991 7706 7953). Feel free to join us a few minutes early to test out your connection! Hannah will lead everyone through the cook-along, but if you would like to follow-along, she’s written step-by-step instructions below:

Garlic Cucumber Salad

  • Wash and cut cucumbers into 0.5” thick circles. Salt cucumbers with a generous pinch of salt. Refrigerate for 20 minutes while you make your dumplings.
  • When you’re done making dumplings, drain the water from the cucumbers and rinse off any extra salt.
  • Pour marinade and cucumbers in a bowl. Finely mince garlic and toss with the cucumber salad. Serve as is or chill until ready to eat!

Wrapping Instructions

To Cook

  • For Boiled Dumplings: boil a pot of unsalted water. Once the water is boiling, drop the dumplings in and give them a light swirl so they don’t stick to the bottom.
  • Once the dumplings are almost done, they’ll float to the top. Let boil for another minute or two until the skin looks cooked through (internal temperature should be 165 degrees). Total cooking time should be about 8-10 minutes once the water is boiling.
  • For Pan-Fried Dumplings: heat up 2 tablespoons of oil in a frying pan over medium heat.
  • Once the oil is shimmering but not smoking, place the dumplings in the pan. Once the
    dumpling bottoms are a golden color, add a 1/4 cup of water to the pan and cover with a
    lid to steam through. Cook for 8-10 minutes. If all the water evaporates and
    dumplings aren’t cooked through, add water a tablespoon at a time and cook until the bottom of the dumpling is dry and crispy (internal temperature should be 165 degrees).

Scallion Pancakes

  • Heat up a tablespoon of oil in a frying pan.
  • Place the frozen hand rolled scallion pancake in the pan and cook both sides until desired crispiness.
  • Cut into eighths to serve.

  • Orders cannot be shipped to P.O. Boxes
  • Orders shipped to Alaska and Hawaii via 2-day will incur an additional $20 charge or $35 for Overnight Shipping. Sorry guys!
