This package includes:

  • 3 jars of Amatriciana Sauce (each 16 oz)
  • 1 jar of Pecorino (12 oz)
  • 1 jar of Guanciale (8 oz)
  • Choose to add Rosemary and Black Pepper Crusted Pancetta: Thick-cut slabs of cured pork belly liberally crusted in black pepper and chopped rosemary and smoked to perfection.

Ingredients

Amatriciana Sauce: Guanciale Lardons, Red Onion, Chili, Pepper, Canned Tomato, Pecorino, Salt, Red Wine Vinegar (Gluten Free)
Pancetta: Pork, Pink Salt, Sugar, Black Pepper, Rosemary, Dextrose

Instructions / Storage

  • Items ship frozen with ice packs which may thaw in transit
  • Upon arrival, remove items from the packaging and place in the refrigerator or freezer
  • Items may be stored in the refrigerator for no more than 3 days and up to 3 months in the freezer
  • Before serving, thaw in the refrigerator overnight or until no longer frozen
  • Should you add Pancetta: It may be stored in the refrigerator for up 1 week and up to 6 months in the freezer.

To Serve

Amatriciana Sauce

  • When ready to serve, place in the refrigerator until defrosted.
  • Warm in a saucepan large enough to also hold your pasta.
  • Cook 8 oz of dry pasta in salted water and strain.
  • Combine with sauce and Guanciale and allow them to cook together while stirring.
  • When the sauce begins to coat pasta pull off the heat and mix in 2 TBSP of pecorino.
  • Serve with an additional sprinkle of pecorino cheese.
  • Enjoy!

Pancetta

  • Grill or saute each slice for 3 minutes on medium heat.
