You’re invited to join us for our latest Goldbelly LIVE! cook-along: a Neapolitan pizza-making class with Kesté’s famed pizzaiolo, Chef Roberto Caporuscio! Born and raised on a dairy farm in Pontinia, Italy, Roberto first developed his culinary skills producing and selling cheese. However, it was in Naples, where Roberto went to study the art of real Neapolitan pizza-making with the most talented pizza masters, that he honed his craft. Traveling to the States, he sparked a pizza revolution, and now serves as the U.S. president of Italy’s Pizza Academy Foundation. (Yes, this is a real thing, and we want IN!) In this interactive event, Roberto will lead you in recreating his classic Neapolitan pizzas, featured not once, but twice on Diners, Drive-ins and Dives, and a favorite of New Yorkers everywhere.

Chef Roberto and the team at Kesté have curated a limited-edition pizza kit with the finest imported Italian ingredients to make pizzas at home: including two pre-baked pizza crusts straight from the Kesté oven, flour, yeast and extra virgin olive oil for future doughs, Grana Padano cheese, fresh homemade mozzarella, basil, and one can of tomatoes harvested straight from Naples. Chef Roberto will also start the class with a tutorial on how to make his signature drink, the Kesté Passion (BYO vodka!). Plus, you can choose to make your kit gluten-free, or add on Italian meats, a pizza pan, or one-of-a-kind Italian pizza stone. Named the “No. 1 Pizza in New York” by New York Magazine, you can now recreate this legendary pizza at home for the very first time!

To join the class, here’s all you need to do:

– Order your DIY Pizza-Making Kit by Monday, February 15 at 10 PM ET.

– By placing an order, you will automatically be enrolled in the exclusive Zoom event.

– Prior to the class, you’ll receive your kit at your door, along with an email with all the info you’ll need to join the Zoom event.

– At 7 PM ET on Thursday, February 18, join Chef Roberto on Zoom for a pizza night you don’t want to miss.

This class has been rescheduled to Friday, February 19th at 7 PM EST, due to the winter storms affecting the South & Midwest during the week of 2/15.

Pizza Making Kit

Store everything in the fridge but the flour & canned tomatoes. Make sure to purchase vodka & amaretto for the cocktail, or the spirit of your choice.

2. An Hour Before the Class:
Gather the necessary kitchen equipment & the ingredients before the cook-along starts, using the checklist below:

Cooking Directions

For the Cocktail

Makes 2 cocktails

  • Add 3oz vodka, 2oz amaretto and 1oz lemon juice in a cocktail shaker with ice and shake until cold.
  • Pour into a rocks glass over ice. Top with ginger beer and garnish.

For the Pizza

  • Preheat the oven to 350 degrees. If using a pizza stone, place it in the oven to heat up.
  • Open the can of tomatoes and crush with your hands into a bowl or use a food processor.
  • Place your pizza crust on a baking sheet. Top with 100g (3.5oz or about ½ cup) of tomatoes.
  • Put pizza in the oven for 4 minutes on the baking sheet or transfer directly onto the pre-heated pizza stone.
  • After 4 minutes, take the pizza out of the oven. Top with fresh basil, 85g (3oz or about ⅓ cup) of fresh mozzarella and a drizzle of extra virgin olive oil.
  • Place pizza back in the oven for 2 more minutes.
  • Remove from oven. Buon Appetito!

For the Dough

  • 20.6 oz of water
  • 1.09 oz of salt
  • 35 oz of flour
  • 0.03 oz of yeast
  • 0.21 oz sugar
  • 0.42 oz of extra virgin olive oil

Chef Roberto will walk you through the dough-making technique during the class, either with a stand mixer with the dough hook or kneading by hand.

This gluten free pizza dough is so good, it's hard to tell from a wheat-based crust! It's got a nice flavor and consistency, crunchy on the outside and chewy on the inside. The toppings were top quality too. I especially liked the Vegana pizza, it had lots of tasty fresh vegetables. The eggplant was my favorite topping. I think Keste is more a pizza for wine drinkers than beer drinkers. It's called Pizza & Vino, so their food matches the branding perfectly. I'm glad to see this combination of healthy vegetarian and gluten free options on Goldbelly. Also, this was the fastest shipping on Goldbelly yet. It arrived the day after I ordered, from New York to California.
