Holiday Lamb Shank Feast for 4-6

The lamb is inspired by its traditional cousin, and our brussels sprouts have been a love affair at first sight. This box takes care of your holiday dinner and will surely make an impression on your guests. The lamb is slowly braised with Levantine aromatics, it is meant to be served with traditional Lebanese dirty rice, and a side of cucumber yogurt.

Instructions / Storage

To Store

  • Items ship with ice packs, may thaw in transit
  • Upon arrival leave olive oil, sumac, and kosher salt containers at room temperature.
  • Remaining contents should be kept refrigerated and last up to 3 days in the fridge
  • Pita bread should always be kept in a sealed bag

To Serve

Shank, Vegetables, Rice

  • Toss your vegetables with some olive oil, season with salt, place them on a baking sheet, and roast at 500F for 15-25 minutes depending on what type of oven you have (vegetables should be fork-tender, but not mushy, showing some caramelization).
  • While the vegetables are roasting, place your rice in a pot, your sauce in a pot, both on low heat, covered, and occasionally stir.
  • Place your shanks in a pot and pour the stock and an equal amount of water on top and cover.
  • Bring to a boil and lower the heat to a slow simmer for about 7-9 minutes covered, turn off the heat, and reserve.
  • In a large platter, place the rice in the center and spread, place the vegetables on the edges, and the shanks in the center of the plate.
  • Pour some sauce over the shanks, and the remainder in a vessel for your guests to add more if they would like.
  • Serve the mint yogurt and cucumber as a side to be added to your rice while eating.
  • Enjoy!

Brussel Sprouts

  • Preheat oven to 375F, and reheat for 4-5 minutes.
  • Drizzle the fig jam and yogurt sauce (to your liking) in a zigzag form and add the provided walnuts and grapes as a garnish.
  • Enjoy!

Fattoush Salad

  • Place the pita chips on a sheet tray and toast in the oven or toaster oven at 350°F for1-2 minutes. Reserve for later use. While they are already toasted, they might lose crunchiness due to refrigeration.
  • Chop the romaine lettuce hearts down the center into one-inch bands.
  • Slice approximately 4-5 cherry tomatoes into halves.
  • Slice your cucumbers into halves length wise, then cut into 1/4 inch slices.
  • Slice your radishes into thin quarter sized circles.
  • Combine all the ingredients above and the mixed greens into a bowl. Add the dressing and toss gently until everything is coated, then sprinkle with one Tbsp of sumac. Variations: Add garlic or vinegar to the dressing.
  • Enjoy!

Baba Ghannouj

  • Place the baba ghannouj in the center of the plate as if you were building a mound. With a large spoon, gently press in the center of the baba ghannouj pushing your spoon outward, in order to create a well effect.
  • You should spread the baba ghannouj to the outer edges of the plate and ideally should have no more than 1/4 to 1/2 inch thickness in the center and thicker edges as shown in this picture.
  • Decorate the baba ghannouj with the provided parsely at 12, 3, 6, and 9 o’clock or 12&6.
  • Add the pomegranate seeds in the middle.
  • Drizzle a 1/4 to 1/2 cup of olive oil provided inside the well you created.
  • Baba ghannouj should be served slightly colder than room temp.
  • Enjoy!
