The Girl & the Goat ships its signature dishes nationwide on Goldbelly! Last year, Top Chef Stephanie Izard and Megan Cline combined forces for an unforgettable dinner and wine pairing. While we’re not able to gather in person this year, we’re so excited to offer a new, virtual experience on Thursday, December 3 – featuring a wine class led by Megan and a cook-along from Chef Stephanie herself! Chef Stephanie will demo the Sweet & Sour Thai Squash Rice Crepes. Also included is Dill-Marinated Chicken with Girl & The Goat Signature Cauliflower to complete your dinner at home.

– The day before your class, you’ll receive your kit at your door, along with an email with all the info you’ll need to join the Zoom event.

Instructions / Storage

  • Kit ships with ice packs, will not arrive frozen
  • Upon arrival place immediately in the fridge
  • All ingredients have to be refrigerated until cooking
  • May be kept refrigerated for 4-5 days
  • Keep cookie dough refrigerated until ready to bake

To Serve

Savory Rice Crepes

  • Rice crepe batter
  • Kabocha squash puree
  • Cooking oil (such as canola or vegetable oil – not provided)
  • Thai sweet & sour sauce
  • Pickled peppers
  • Mint

Make the Crepes

  • Heat an 8-inch non-stick pan (or crepe pan) over medium heat.
  • Once hot, add in about 3 Tbsp. of your crepe batter.
  • Swirl the pan around to ensure the batter evenly covers the bottom of the pan in a very thin layer.
  • Let cook until the bottom side is set, about 2-3 minutes.
  • Carefully flip your crepe using a small spatula and continue cooking until cooked through, about 1-2 minutes more.
  • Transfer crepe to a clean plate and repeat with remaining batter. (Don’t worry if some get messed up, we gave you plenty of extra batter)!
  • Fill each crepe with a large spoonful of squash puree.
  • Fold in half, then in half again, enclosing the squash and creating a triangle shape.
  • Coat a large skillet with about 2 tablespoons of canola oil and heat over medium heat.
  • Once hot, add in your squash-stuffed crepes (working in batches if necessary).
  • Cook until lightly browned on each side and warmed through, about 2 minutes per side.
  • Transfer to a serving plate and top with a few spoonfuls of Thai sweet & sour sauce, pickled peppers and torn leaves of fresh mint.

Dill Marinated Sweet Potatoes

  • Roasted Sweet Potatoes
  • Cooking oil (such as canola or vegetable oil – not provided)
  • Cauliflower
  • Preserved Lemon
  • Pickled Peppers
  • Pine Nuts
  • Parmesan
  • Dill Tahini Marinade
  • Grapefruit Juice
  • House-made Pita
  • Labneh
  • Grapefruit Segments
  • Mint

Make the Sweet Potatoes and Cauliflower

  • Preheat your oven to 375 degrees.
  • Place cauliflower in a large mixing bowl.
  • Toss with the preserved lemon, all but about 2-3 tablespoons of the pickled peppers and pine nuts and half of the Parmesan.
  • Spread in an even layer on a parchment-lined baking sheet.
  • Place sweet potatoes on a separate parchment-lined baking sheet.
  • Transfer to the oven and roast until the vegetables are warmed through, about 10-15 minutes.
  • Meanwhile, in a small bowl, whisk together the grapefruit juice and dill tahini marinade.
  • Wrap the pita in foil.
  • With about 5 minutes left in the cooking time, place pita in the oven until warmed through, about 5 minutes.
  • Remove cauliflower from the oven and, while still warm, toss with reserved Parmesan cheese and transfer to a serving bowl.
  • Top with additional pickled peppers and pine nuts and some torn leaves of fresh mint.
  • Spread a large spoonful of labneh on the bottom of a serving plate or individual plates.
  • Place the sweet potato on top and drizzle with grapefruit/dill sauce.
  • Top with grapefruit segments, pickled peppers and freshly-torn mint leaves.
  • Serve alongside warm pita bread and roasted cauliflower.

Dill Tahini Chicken

  • Cooking oil (such as canola or vegetable oil – not provided)
  • Cauliflower
  • Preserved Lemon
  • Pickled Peppers
  • Pine Nuts
  • Parmesan
  • Dill Tahini Marinade
  • Grapefruit Juice
  • House-made Pita
  • Labneh
  • Grapefruit Segments
  • Mint

Make the Chicken

  • Preheat your oven to 375 degrees.
  • Heat a large oven-safe skillet (or two smaller skillets if you don’t have one large enough) over medium-high heat.
  • Coat with a splash of cooking oil and, once hot, place the chicken in the pan(s), skin side down.
  • Sear on the stove until golden brown, about 1-2 minutes.
  • Transfer to the oven (or place on a baking sheet if your pan is not oven safe), skin side still down, and roast for about 25 minutes.
  • After 25 minutes, flip the chicken and continue cooking for about 5-10 minutes more, until cooked through. (Note: every oven is different so cooking times may vary. But, 30-35 minutes should cook the chicken through so it’s moist and tasty! Your chicken is done when the juices run clear when pierced with a fork).
  • Meanwhile, while your chicken roasts, transfer cauliflower to a large mixing bowl.
  • Toss with the preserved lemon, all but about 2-3 tablespoons of the pickled peppers and pine nuts and half of the Parmesan.

  • Place in the oven alongside the chicken and roast until cauliflower is warmed through, about 10-15 minutes.

  • Once your chicken is done, remove from the oven and let rest in the pan for at least 5 minutes before serving.
  • While your chicken rests, place pita bread in the oven until warmed through, about 5 minutes.
  • Toss warm cauliflower with reserved Parmesan cheese and transfer to a serving bowl.
  • Top with additional pickled peppers and pine nuts and some torn leaves of fresh mint.
  • Spread a large spoonful of labneh on the bottom of a serving plate or individual plates.
  • Place the chicken on top and drizzle with grapefruit/dill sauce.
  • Top with grapefruit segments, pickled peppers and freshly-torn mint leaves.
  • Serve alongside warm pita bread and roasted cauliflower.

Make the Cookies

  • Preheat the oven to 350 degrees.
  • Form cookie dough into 2 equal-sized balls.
  • Place on a baking sheet and bake for 12-18 minutes, rotating the tray midway through, until just beginning to turn golden brown around the edges.
  • Let cool slightly before serving.
