This savory soup is packed with four kinds of roasted New Mexico Hatch chiles (including green chiles, poblanos, and jalapenos) along with corn, Yukon gold potatoes, and roasted vegetable broth.

Sopa Bolita
This hearty and delicious soup’s main ingredient is the heritage Bolita bean. Grown without irrigation in the upper drylands of New Mexico, this small, pink bean has a creamy, white interior. They’re simmered with butter, yellow onions, Hatch red and green chiles, jalapenos, tomatoes, fresh cilantro, and garlic.

Ingredients

Sopa Bolita – Bolita Beans, Butter, Vegetable Oil, Yellow Onions, Fresh Cilantro, Jalapenos, Garlic, Green And Red Hatch Chiles, Tomatoes, Salt, Corn Starch.
Hatch Green Chile Corn Chowder – Hatch Roasted, Mild Green Chiles, Poblano, Jalapeno And Dried/Ground, Heavy Cream, Milk, Corn, Yukon Gold Potatoes, Red Bell Peppers, Celery, Yellow Onions, Vegetable Oil, Herbs, Vegetable Broth.

Instructions / Storage

  • Soups ship frozen with ice packs, may thaw during transit.
  • Upon arrival, place soup in the refrigerator or in the freezer.
  • Soup lasts up to 4 days in the refrigerator or up to 1 month in the freezer.

To Serve

Stovetop

  • Defrost soup in refrigerator overnight.
  • Heat soup in a pot over medium-high heat until simmering, about 5-7 minutes.
  • Remove pot from stove, serve, and enjoy!

Microwave

  • Defrost soup in refrigerator overnight.
  • Heat soup in microwave for approx. 5-6 minutes, stirring soup halfway through.
  • Remove from microwave, serve, and enjoy!
