It’s the taco that put Empellón on the map! Combining chef Alex Stupak’s love of both tacos and New York City’s food culture, this is where deli pastrami meets the warm embrace of the corn tortilla, ready to be topped with sauerkraut, mustard, mustard seed salsa, lime, onion, and cilantro!
Chef Alex Stupak rose to fame as one of the country’s hottest pastry chefs during his time at Chicago’s acclaimed Clio and Alinea and NYC’s wd-50. One day, however, he took a step back, asked himself, “What do I love to eat the most?” and decided to go confidently in the direction of his answer: Tacos! He opened Empellón to widespread critical acclaim in New York’s West Village in 2011, and it remains a certified hotspot.
This package serves 2-3 people and includes:
- Short Rib Pastrami (12 oz.)
- 10 Corn Tortillas
- Dijon Mustard (4 oz.)
- Sauerkraut (9 oz.)
- Smoked Water (8 oz.)
- Coarse Sea Salt (2 oz.)
- Mustard Seed Salsa (4oz.)
- Minced White Onion (4 oz.)
- 1 Bunch Cilantro
- 2 Limes
Unfortunately due to California agriculture laws, Empellon is unable to ship limes to California Residences. Any orders shipping to California will exclude limes.

Shortrib Pastrami: Chuck short ribs, salt, sugar, brown sugar, honey, garlic, pickling spices, black pepper, coriander
Corn Tortillas: Ocotillo blanco corn, slaked lime
Mustard Seed Salsa: Mustard seeds, cider vinegar, pickled jalapeños

Instructions / Storage
- This package ships frozen with ice packs, may thaw in transit
- Upon arrival store all items in the fridge for up to 3 days.
- Open the package and place all items in a refrigerator.
- Chop cilantro and place alongside minced onions.
- Cut limes into wedges.
- Place mustard seed salsa, dijon, and sauerkraut in serving dishes.
- Heat up pastrami with the smoked water provided in a lidded cooking vessel.
- Toast tortillas one by one in a large skillet and wrap up in a towel.
- Remove hot pastrami from the oven and slice or chop.
- Place tortillas, pastrami, salsas, onion, cilantro, and limes on your table and enjoy assembling tacos to your liking.
