Celebrate Easter with Chef Daniel Boulud’s Elegant Feast for Two featuring our spring-inspired menu to enjoy at home. Our four-course menu includes 50 grams of White Sturgeon Caviar and Housemade Blinis, Jumbo White and Green Asparagus with Poached Egg Dressing and Toasted Almonds; Elysian Fields Farm Lamb Roast with Savoury, Spring Vegetables, Creamy Morels, and Potato Gratin. For dessert, build your own Strawberry Shortcake Trifle complete with lime biscuit, vanilla whipped ganache, strawberry confiture, and fresh strawberries.

Caviar & Blinis

Warm Asparagus Salad With Poached Egg Dressing

  • 6 pcs. Jumbo White Asparagus (Raw)

  • Pea Shoots (2 oz.)
  • Toasted Almonds (1 oz.)

Elysian Fields Farm Lamb Roast

  • Seasoned Lamb Loin and Tenderloin (12 oz. Pre-cooked)
  • Lamb Jus (4 oz.)
  • Onion, Tomato, Eggplant (12 oz.)

Spring Vegetables

  • Carrots, King Trumpet Mushrooms, Radish, Pearl Onion, Sugar Snap Peas (4 oz.)

Morel & Potato Gratin

  • Morels (1 oz.)

  • Lime Biscuit (350 g)
  • Vanilla Whipped Ganache (500 g)

Instructions / Storage

  • Feast ships frozen with ice packs
  • Upon arrival place everything in the refrigerator for up to 2 days

Cooking Instructions

“Preheat your oven to 375°F

Caviar & Blinis

  • Place the blinis on a baking tray and place in the oven for 4-5 minutes
  • Transfer to a serving dish and serve with the caviar and crème fraîche on the side.

Warm Asparagus Salad With Poached Egg Dressing

  • Bring 2 large pots of water to a boil and season one lightly with salt and a pinch of sugar
  • Drop the white asparagus inside and cook it for 8-9 minutes, until it is tender
  • Add the green asparagus to the other pot and season it with salt, to taste. cook for another 6-7 minutes, until it is tender
  • Remove from the pot with a slotted spoon and drain on a towel-lined plate, season with salt and pepper and half of the chopped chives
  • Divide among 2 warm plates, top it with the pea shoots and serve with the Poached Egg Dressing on the side

Morel & Potato Gratin

  • Cover the gratin with aluminum foil and place in the oven for 15 minutes
  • Uncover and continue to cook for another 10 minutes

Spring Vegetables

  • Reheat the spring vegetables in a sauté pan with 1 tablespoon of olive oil, tossing until they are warm, add some chopped chives to finish

Elysian Fields Farm Lamb Roast

  • Place the lamb saddle (inside the bag) in a medium-sized pot of simmering water and try to keep it around 135° F or 57° C by turning the pot on and off
  • After around 20 minutes, remove the lamb from the bag and place it in a pan of foamy butter, roast it over medium heat until the outside has browned
  • Brush the outer surface with the mustard provided and roll in the parsley breadcrumbs
  • Separately, reheat the sauce in a small saucepan, stirring often.
  • Carve the lamb roast in half using a sharp knife and place on warm dinner plates. Divide the vegetables between the plates and serve with the morel sauce on the side.

Strawberry Shortcake Trifle

  • Place the lime biscuit on the bottom of your dish, layer with half of the strawberry confiture.
  • Slice a third of the fresh strawberries and fan them around the dish.
  • Pipe a layer of the vanilla cream and then top it with another biscuit, layer it the same way.
  • Add another third of sliced strawberries, and repeat piping a layer of the cream.
  • Finish with the final cake and decorate the top with more cream, strawberry confiture and fresh berries.

Chef Daniel Boluud and his team executed the Gallette de Rois with great precision and care. The package arrived in pristine conditioned and included a paper crown and a small bag with an almond inside to be placed discretely in the tart- in keeping with tradition. Warmed in the oven at 375 degrees Fahrenheit for about 10 to 15 minutes, the galette provided us with a tasty dessert, as well as a joyous breakfast treat for the following morning. The QR codes that come with the packages allow you to scan and gain access to the heating and storage instructions on the Goldbelly website (Kudos for the hospitality and convenience Goldbelly)!
