Thanksgiving Day at Commander’s Palace fills to the brim with celebration. We host a lot of the same families year after year, as we have become a family tradition to so many of our neighbors. Holidays are always such an exciting time where music, joy, and laughter fill the air of the dining rooms. Festive food and truly genuine hospitality is a celebration of the spirit of Thanksgiving. Out of the Haute Creole kitchen of Commander’s Palace, you can adorn your table with some of our Thanksgiving favorites. Also, found in Commander’s Kitchen and The Wild Side Cookbooks.

Tory McPhail has been executive chef since 2002, and in that time he’s racked up countless accolades, including the 2013 James Beard Award for Best Chef: South. He’s cooking up signature dishes including cheesy garlic bread (served with every meal), turtle soup (which has been on the menu since day one), wild shrimp & cognac with creole cream cheese grits and old-fashioned pecan pie, and he’s bringing a true taste of New Orleans to your home.

This Thanksgiving Dinner for 4 includes: Smoked Duck Fat Injected Turkey, Cognac Turkey Gravy, Molasses & Sea Salt Whipped Sweet Potatoes, your choice of stuffing or dressing, and a whole Pecan Pie. Enjoy!

  • Smoked Duck Fat Injected Turkey, Sliced (32 oz.)
  • Cognac Turkey Gravy (16 oz.)
  • Molasses & Sea Salt Whipped Sweet Potatoes (32 oz.)
  • Choice of Stuffing or Dressing (each 32 oz.)
  • 1 whole 9.5" Pecan Pie (serves 8)

Dressing & Stuffing Options Include

  • Smoked Tasso & Andouille Stuffing (32 oz.) – Smoked pork Tasso, spicy Andouille sausage, Creole trinity and local bread.
  • Shrimp & Mirliton Dressing (32 oz.) – Gulf shrimp, mirliton (part of the squash family, known elsewhere as chayote), smoked ham, aromatic trinity and ripped local Leidenheimer bread.
  • Briny Gulf Oyster Dressing (32 oz.) – Plump local oysters, aromatic trinity and fines herbs with ripped local Leidenheimer bread.

  • Molasses & Sea Salt Whipped Sweet Potatoes – Sweet potatoes, butter, sour cream, molasses, sugarcane syrup, kosher salt, sea salt, white pepper, ground ginger, nutmeg, cinnamon, pecans Allergens: Soy, Dairy, Nuts

Instructions / Storage

  • Dinner ships frozen with ice packs, may thaw in transit
  • Upon arrival remove packaging and place in the fridge or freezer
  • May be kept refrigerated for up to 2 days or frozen for up to 3 months
  • If you plan to enjoy the within 1-2 days, store in the refrigerator upon arrival. You’ll need to make sure the turkey and accompaniments are thawed all the way through before cooking to serve.

Turkey

  • If you plan to enjoy the turkey within 1-2 days, store turkey in the refrigerator upon arrival. You’ll need to make sure the turkey is thawed all the way through before cooking to serve.
  • Once thawed, pre-heat your oven to 300 degrees and turn on the fan or convection if it’s available.
  • Place the turkey, covered in the oven-safe container provided, in the oven, and bake on the center rack for 1 hr – 1 hr 30 minutes depending on your oven.
  • Ensure the internal temperature is 165*F before enjoying

Gravy

Stovetop

  • Place saucepot on the stove over Med-High heat and bring the gravy to a rolling boil
  • Be sure to stir the gravy constantly throughout the reheating process so it does not scorch
  • Test the temperature of the gravy to ensure a temperature of 185*F before enjoying
  • Pour hot gravy into a serving dish, or over your sliced turkey and enjoy!

Microwave

  • Once the gravy is defrosted, use a rubber spatula to remove the gravy from the container and into a microwave-safe bowl
  • Cover the gravy with plastic wrap and continue to heat the gravy on full power until hot and steaming. About 2-5 minutes depending on your microwave
  • Let rest in the microwave for 1 minute to ensure heat is distributed evenly throughout the gravy
  • Remove from microwave and stir thoroughly
  • Test the temperature of the gravy to ensure a temperature of 185*F before enjoying
  • Pour hot gravy into a serving dish, or over your sliced turkey and enjoy!

Whipped Sweet Potatoes

Oven

  • Preheat to 325 degrees and bake covered in the container provided for 45 minutes
  • Uncover and stir the potatoes gently to make sure it is heating evenly throughout
  • Cover again and bake until the desired temperature is reached
  • Serve while hot and enjoy!

Microwave

  • For the microwave, place sweet potatoes in a microwave-safe container, keep the sweet potatoes loosely covered with a lid or standard plastic wrap
  • Reheat on full power in 2 minute increments and stir often
  • Serve while hot and enjoy!

Stove

  • If reheating on the stove, place the saucepan over medium heat for about 10 minutes and stir often * Ensure the sweet potatoes are smooth all the way through
  • Serve while hot and enjoy!

Smoked Tasso & Andouille Stuffing

  • Preheat oven to 325 degrees,
  • Bake stuffing covered for 45 minutes in the oven in the container provided
  • Reheat to an internal temperature of 200*F
  • Uncover and stir the stuffing gently to make sure it is heating evenly throughout.
  • Cover again and bake until desired temperature is reached.
  • Serve while hot and enjoy!

Shrimp & Mirliton Dressing

  • Preheat oven to 325 degrees
  • Bake dressing covered for 45 minutes in the oven in the container provided
  • Uncover and stir the dressing gently to make sure it is heating evenly throughout
  • Cover again and bake until desired temperature (185*F) is reached.
  • Serve while hot and enjoy!

Briny Gulf Oyster Dressing

  • Preheat oven to 325 degrees
  • Bake dressing covered for 45 minutes in the oven in the container provided
  • Uncover and stir the dressing gently to make sure it is heating evenly throughout
  • Cover again and bake until desired temperature (200*F) is reached.
  • Serve while hot and enjoy!

Pecan Pie

Heating

  • Preheat the oven to 250*F.
  • Re-bake the defrosted whole pie at 250*F until it’s hot all the way through and very fragrant. Test for an internal temperature of 145*F before enjoying
  • Cut the pie pecan side up from the center out to the crust edge. Be very careful when you get to the crust so you do not break off pieces of the crust edge.

Plating:
Place your pieces of sliced pie onto a serving dish. Whether you used the microwave or the oven, we like a scoop of vanilla ice cream on top and suggest you do the same!

You can easily pass this off as your own homemade pie and your guests won’t feel bad about sitting down to eat the entire thing before getting up from your table to thank you.
