They start with Bacardi Coquito, Puerto Rican eggnog made with coconut milk, rum, cinnamon, cloves, and nutmeg, then inject it into a coconut cupcake, layered in a jar with Brooklyn Cupcake’s signature whipped mascarpone cream cheese frosting. It’s like Christmas on the beach, in jarred form!
Brooklyn Cupcake began as a family affair in 2010 with sisters Carmen Rodriguez and Gina Madera partnering up with their cousin Michele Caballero to instill a little local flavor to the NYC cupcake scene. The Brooklyn natives mixed recipes from their Puerto Rican and Italian backgrounds to create flavors never before seen in the cupcake world; we’re talking Flan, Coquito, Dulce de Leche, Tres Leche, Tiramisu, and Rainbow Cookie Cupcakes! They also make equally amazing cupcakes in a jar. Ingredients
Cake flour, sugar, baking soda, baking powder, eggs, canola oil, buttermilk coconut extract, confection sugar, vanilla extract, heavy cream and mascarpone cheese. condense milk, evaporated milk coconut paste, coconut milk, nutmeg, cinnamon, cloves and cooked off rum for flavoring.

Upon arrival, each jar should be stored in the refrigerator for up to 5 days
